The grapes comes from a vineyard called “Vigna Bianca”, planted in the ‘70s, in the south-east in land of marl surrounded by the typical mediterranean brushwood.
The harvest is done by hand in boxes, then grapes go to the vat by fall, after a slow cleaning of the bunches, without screwing and pumping, ensuring the integrity of the fruits.
The alcoholic fermentation process takes place without the addition of yeast or other substances that can help, for a period of 20-25 days. During the fermentation the pumping over is done by hand. Delestage, punching down and wetting are done depending on the characteristics of each mass. At the end of this process it is time to draw off the lees that divide the first-pressing must from the remaining of pressing. Then the wine rests on the lees for 1 or 2 months. This phase takes a long time in order to ensure the excellence of the product.
Once the malolactic fermentation and the racking are complete, the Felix switches, from the steel to the wood where rests for 8 or 12 months and 6 in bottle.
If the season proves climatically adverse, failing to ensure the excellent quality of grapes, the Felix is not produced.
